Sterlet caviar comes from the sterlet sturgeon (Acipenser ruthenus). Sterlet is a small species that rarely reaches 16 kg. It is found in the Black Sea, the Caspian Sea and the Azov Sea. The fish can live in both salt and fresh water. Magnatum's Sterlet caviar originates from a mountain lake in Bulgaria. It has a delicate taste and a light to dark gray color. This caviar is characterized by its small eggs, which are 2.0-2.5 millimeters in size. The sterlet sturgeon is a difficult fish to breed, so it usually takes between 5-10 years to get its caviar.
