Sterlet Caviar


Sterlet caviar comes from the sterlet sturgeon (Acipenser ruthenus), a small species that rarely reaches 16 kg. It is found in the Black Sea, the Caspian Sea and the Azov Sea. The Sterlet sturgeon can survive in both salt and fresh water. Magnatum's Sterlet caviar originates from a mountain lake in Bulgaria. It has a delicate taste and a light to dark grey colour. This caviar is characterized by its small eggs, which are 2.0-2.5 millimetres in size. It is extreme delicate fish to breed, and it often takes 5-10 years of waiting to get the caviar.
