Beluga caviar comes from the Beluga sturgeon (Huso Huso). A fish that can reach 8 meters long and weigh over 1.5 tons. Originally found in the Black Sea, the Caspian Sea and the Azov Sea it was also present in Italy in the Adriatic, the Ionian Sea and their tributaries before its extinction. Its quality is the rarest and most expensive, defined by large roe (more than 3.5 millimetres), oval shape and colour tones of pearl to dark grey. This caviar should be enjoyed on its own so that one can really appreciate its qualities.
