Blinis with Crème Fraîche and Gold Caviar Recipe
Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- Crème fraîche (see recipe below)
- Gold caviar from Huso dauricus and Acipenser schrenkii
- Fresh dill or chives, for garnish (optional)
Crème Fraîche Recipe:
- 1 cup heavy cream
- 2 tablespoons buttermilk
Instructions:
For the Crème Fraîche:
1. In a clean glass jar or container, combine the heavy cream and buttermilk. Stir well to combine.
2. Cover the jar with a clean cloth or paper towel and secure it with a rubber band or lid, leaving it slightly ajar to allow air to circulate.
3. Let the mixture sit at room temperature for about 12-24 hours, or until it reaches your desired thickness. The longer it sits, the thicker and tangier it will become.
4. Once the crème fraîche has thickened to your liking, give it a stir and refrigerate it for at least 4 hours before using. It will continue to thicken as it chills.
5. Use the crème fraîche within 7-10 days. Stir before serving.
For the Blinis:
1. In a mixing bowl, whisk together the flour, baking powder, and salt.
2. In another bowl, whisk together the milk, egg, and melted butter until well combined.
3. Gradually add the wet ingredients to the dry ingredients, whisking until smooth and well incorporated. Let the batter rest for about 10-15 minutes.
4. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or oil.
5. Pour small spoonfuls of batter onto the skillet to form small pancakes, about 2-3 inches in diameter.
6. Cook the blinis for 1-2 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
Assembling the Blinis:
1. Once the blinis are cooked and slightly cooled, spread a small dollop of crème fraîche onto each blini.
2. Gently place a small spoonful of gold caviar on top of the crème fraîche on each blini.
3. If desired, garnish the blinis with fresh dill or chives to add a pop of color and flavor.
4. Arrange the blinis on a serving platter and serve immediately as an elegant appetizer or part of a gourmet meal.
